Spring chicken!

This is what came out of our oven this morning thanks to John. He claims that
he just copies the Zuni Roast Chicken recipe but I'm convinced that he has some
secret that he's not sharing with me. Either way, it is truly the best roast chicken
ever and we have it at least once a week followed by chicken soup the next day.
Truly economical and truly delicious in a way that seems more appropriate for another decade
than our current one. I'd try it if I were you. Indulge in the chicken with a salad or
caramelized fennel (just cut up a fennel head, throw it in a hot pan with olive oil
and cook over high heat till it gets brown and sugary). Or - toast some pine nuts, pour
some hot water over currants rehydrating them, add these both (not the currant water) to a bit of
arugula or any green that you favor and add the hot chicken and it's juices along with a bit of olive
oil, salt and pepper and you have a perfect spring time meal.
